I have thought about it, but I love cheese too much! I do eat a very vegetable/plant based diet. My lunches are usually a bowl full of greens--broccoli, lettuce, sprouts, asparagus, zucchini, etc. and mushrooms. And I pack vegetables into my evening meals as well. But completely vegan would be hard!
