I heard that kids need up to 50 exposures to new foods sometimes. An exposure could just be leaving it on their plate where they see and smell (and maybe poke or lick it). We made this a bit of a game in my family and my kids now 9 and 13 are not fussy at all. We’ve even tried some pretty adventurous food like huhu grubs!
